Cookie Chocolate Bark

It’s admit weekend at my medical school, which means the students who will start as first-year med students this fall are coming to visit and see if they like our school. This means as current first years, we want to promote our school as much as possible and plan as many fun activities as we can pack into three days for the prospective students.

Many of my talented classmates are performing this weekend, hosting prospective students, staffing activities fairs, and planning games and potlucks for prospective students to attend. This evening my residential building is holding a dessert pot-luck for prospective students.

This chocolate bark is it is super fast to put together so it’s perfect when you have a day of class or work and need something for the evening. I started melting  chocolate in the afternoon after classes and finished making and cleaning up all within one hour. The only time you need to count in is the time it takes for the chocolate bark to set in the fridge (about 2 hours of non-active time).

For this recipe, you can use home-made cookies (extra yummy), but I was in a hurry so I used Chips Ahoy cookies from the grocery store. Chips Ahoy cookies are super sweet, so to balance it out I used a bittersweet dark chocolate instead of milk chocolate. This chocolate bark is lined with cookies on the bottom, on the top, and dotted with Kashi cereal for extra crunch.

My school color is red, so I made a red drizzle and sprinkled the chocolate bark with red sprinkles. The silver and off-white sprinkles are for added sparkle. Glittery sprinkles are so pretty, they make me think of a fairy sprinkling fairy dust on my dessert. The specific sprinkles I used here were: Betty Crocker red sprinkles, Betty Crocker silver flake sprinkles, and Williams-Sonoma shimmering sugar. PS my favorite glittery sprinkle are these gold star sprinkles I used on my mocha espresso cake recipe.

I hope this tasty chocolate bark gives the admits a sweet impression of our school.

Cookie Chocolate Bark


  • 5 cups melted dark chocolate
  • 1 13.72 oz package chips ahoy cookies, broken to pieces
  • 1 cup Kashi cereal
  • 2 tablespoons coconut milk
  • 1/2 cup powdered sugar
  • Red food coloring
  • Sprinkles


  1. Line 9x13 cookie sheet with aluminum foil
  2. Cover cookie sheet with one layer of chips ahoy cookies broken into pieces.
  3. Melt chocolate in microwave, stirring every 30 seconds until all is evenly melted.
  4. Pour melted chocolate over chips ahoy pieces
  5. Drop remaining chips ahoy pieces and Kashi cereal on the melted chocolate
  6. Mix 1/2 cup powdered sugar with 2 tablespoons coconut milk to make a viscous drizzle. Add red food coloring while stirring till you get a vibrant red. Drizzle over chocolate bark. Add sprinkles of your choice.
  7. Refrigerate for at least 2 hours to let set
  8. Cut into pieces and serve!
