Easy Slow Cooker Chicken Curry

This easy slow cooker chicken curry is rich and velvety with a hint of spicy. The best part is I only spent 15 minutes prepping!

Before I made this curry, I cooked curry many times but using a cube of solid curry mix. I loved the taste of that curry, but always had a stomachache after I ate it. This curry is a lightened up healthier version.

I spent about 15 minutes preparing everything, went to an afternoon class and came back to a pot of sizzling slow cooked curry. What makes this even more perfect, was that the day after I made the curry there was a bag of free naan in the medical student lounge for the taking. Being the good raccoon that I am, of course I brought it home.

For those of you reading this who are not familiar with medical school, I just wanted to say medical students are great scavengers and we can find free food almost anywhere and everywhere. In fact whenever there are leftovers at a seminar, my classmates (and I) have our tupperware ready in our backpacks or our professors prepare to-go boxes for us. You think I am kidding… but I am not. We are a resourceful bunch. You may want a medical student with you, should you ever become stuck on a dessert island. We’ll find you free food, and volunteer rudimentary medical services.

I digress. The student lounge naan was a sign I should be eating curry this week. Especially THIS super easy lightened up healthy yummy curry!

Easy Slow Cooker Chicken Curry


  • 1 can light coconut milk
  • 1 cup water
  • 6 oz can tomato sauce
  • 2 tablespoons + 2 teaspoons curry powder
  • 3/4 teaspoon salt
  • 2 teaspoons cumin
  • Filling
  • 1/2 chopped onion
  • 15 oz can of chickpeas, drained
  • 1 potato, diced to 1 centimeter wide cubes
  • 1 pound raw chicken tenders, chopped to 1 inch wide pieces
  • Garnish
  • 1 cup frozen green peas
  • 1/4 cup cut cilantro


  1. Combine all the sauce ingredients in the slow cooker, and mix with fork or whisk until all combined.
  2. Add filling ingredients, and mix well with spatula. Turn slow cooker to high for 4 hours or 8 hours on low.
  3. Right before serving, add frozen peas to curry and mix to distribute peas. Chop fresh cilantro and garnish on top of the curry.
  4. Serve with naan or rice.

Haha med students ARE great at finding free food! Actually I think this is a skill most students have in general. 😛

I could eat chicken curry every day of my life and LOVE making it in the crock pot! So much fun setting it up in the morning and coming home to a house full of delicious smells and a comforting meal. Gorgeous, my dear!

Slow cooker curry sounds so good right now. It is rainy here and I feel like a platefull of some rice rice and nice hot curry on the side. So soothing and comforting!

Wow, I can’t believe the curry sauce is that simple to make! Is it?? Just curry powder and cumin? I don’t usually make curries because I assume it is way too hard, too may spices!! YUM, can’t wait to try this!
