Say HELLO to your favorite breakfast drink in cake form. These creamy frappucino cupcakes with cinnamon sugar dusting will have you craving cupcakes for breakfast.

Creamy Frappuccino Cupcakes - Vegan and Delicious!The cupcake stump has the taste of a hot brewed cup of coffee, and the super creamy cinnamon sugar and espresso dusted frosting is out-of-this-world creamy. I took one bite and thought – is this really vegan or did I use the real butter on accident today?

This frosting may be my tastiest frosting yet, and it’s perfect with a slightly bittersweet cupcake flavor like coffee. But I would probably eat this frosting smeared onto bagels. The frosting is best when you’ve just made it, after whipping it up as fluffy as a cloud. I noticed if I let the frosting sit  for a couple days on the countertop, the outermost layer of the frosting will get a little hard, but the inside remains very fluffy. The solution of course, is to eat these the day you frost them!

It reminds me of the barista sprinkling toppings on a frappucino at the coffee shop. Plus it gives the sweet buttercream frosting a kick to really pack this cupcake with flavor. The tops of the cupcakes have little gold stars to make them glitter. And feeding my sprinkles addiction, these gold stars are possibly my favorite sprinkle in my extensive collection of sprinkles. The mini straw in each cupcake was made by cutting big paper straws.

We gave some to a friend, and he kept suggesting I use the 4-cupcake gift box instead of the 6-cupcake gift box. Don’t worry, I went with the 6-cupcake box!

Recipe for the cupcake stump was adapted from the cookbook Vegan Cupcakes Take Over the World. The frosting recipe is a Savoring Spoon original.

Ingredients
Dry
  • 11/4 cups all purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
Wet
  • ⅓ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup vanilla soy yogurt
  • ⅔ cup soy milk
  • 1 teaspoon pure vanilla extract
  • 2.5 tablespoons espresso powder (make it 3 tablespoons if you want an extra burst of coffee flavor)
Frosting
  • ⅔ cup non-hydrogenated vegetable shortening*
  • ½ cup vegan margarine**
  • 1.5 - 2 tablespoons soy milk (or almond milk)
  • 3 cups sifted powdered sugar
  • 1 teaspoon vanilla
  • cinnamon, espresso powder, and cinnamon sugar for dusting
Instructions
Cupcakes
  1. Preheat oven to 350F and line cupcake tin with cupcake liners.
  2. Whisk all dry ingredients in a medium size bowl.
  3. Mix all wet ingredients together and whisk to combine quickly.
  4. Once your oven is done pre-heating, add the dry ingredients to the wet and whisk to mix well. It is important to not combine the two unless your oven is ready for baking, because letting the batter stand too long makes the middle of the cupcake invert.
  5. Bake for 20 min. Remove and let cool completely.
Frosting
  1. Cream shortening and margarine together with an electric mixer. Add vanilla.
  2. Sift in the powdered sugar, mixing as you go.
  3. Add soy milk 1 tablespoon at a time and mix with an electric mixture till creamy. I added 3 tablespoons for an ultra silky finish.
Assembly
  1. After cupcakes are cool, frost cupcakes using an Ateco 868 tip.
  2. Drizzle espresso powder, cinnamon, and cinnamon sugar over the tops of the cupcake. Top with gold stars!
Notes
*It is important to get the non-hydrogenated vegetable shortening. Don't use crisco! It won't turn out right with criso. I used the spectrum vegetable shortening (buy at whole foods or Sprouts), but any non-hydrogenated shortening should be good.

**For vegan margarine I used Earth Balance. You can pick this up at any local grocery store. I believe this is the only vegan margarine I know of that is readily sold in stores.
