Pina Colada Smoothie

pina colada smoothieBefore the end of summer, I wanted to share a summer drink recipe that is one of my favorites! The simple pina colada smoothie. A mix of the coconut milk, pineapple, and banana lends a very tropical taste to this smoothie. It reminds of the time my parents and I went o Hawaii during college, and there were coconuts right on the palm trees lining the beaches. My dad and I found a huge coconut that had fallen to the ground, and we tried to bring it back to California, but had to unfortunately part with our coconut because of TSA regulations. Since pineapple is another a major product of Hawaii, there were also numerous tours available of pineapple farms and pineapple flavored desserts galore.

I recommend cutting the banana into blocks before you freeze (because it will be near impossible to cut once you freeze it). Frozen bananas are great for smoothies – both adding flavor and keeping the smoothie icy cold. In the summer, I often peal a couple bananas at a time and cut them into discs, freezing them in an airtight container for anytime I want to make a smoothie.

When I’m not doing drinking this delicious smoothie, I am actually on my OB/GYN clinical rotation right now. There are so many interesting things to learn about how to see if a patient’s pregnancy is going smoothly or how to treat different conditions the gynecological patients have. I found that seeing patients in person helps it stick way better in my head then the days of pre-clinical learning when most things where in hypothetical. Enjoy the smoothie! Summer may end soon, but you can always keep frozen bananas in your freezer and make this whenever you miss the summer.

Pina Colada Smoothie

Rich and creamy pina colada smoothie!

Ingredients
  

  • 1 can chilled light coconut milk
  • 1 cup chopped pineapple chilled (can be frozen pineapple too!)
  • 1 frozen banana
  • 2 maraschino cherries optional, just for fun!
  • coconut flakes optional, just for fun!

Instructions
 

  • Add all ingredients, except the cherries, into a blender and blend until smooth.
  • Garnish with maraschino cherries and coconut flakes, and slurp up!

Crazy for coconut anything …well maybe not anything that covers too much territory…. Will definitely make this smoothie to drink but I’m also thinking that this would make really great popsicles on a hot summer day…..

I love pina colada anything. Coconut, pineapple, and banana are made for each other. This smoothie looks so yummy and refreshing!

We are SO into smoothies lately, and I feel like they are going to become even more of a staple when I am back in the hospital. Love that this can double as breakfast and dessert!

Oh yum!! This instantly transports me to lazy days spent on Maui’s Kaanapali Beach! I will definitely have to give this smoothie a try just so I can make my daydreaming a little more realistic :p And great tip about the bananas – I love freezing them too. 🙂

Pina Colada for breakfast DOES sound really good! Ah I am notorious for wanting to bring food back from travels and TSA knows it I think! Once I had some flavored tofu snacks traveling internationally, and the airport security said I had to throw out the chicken flavored tofu snacks because I couldn’t bring meat products into the US. Good thing I had a variety of flavors, and the chicken flavor was just one of many 😛
