Turkey Stuffed Peppers

There was a pot luck last week at school. People brought in so many yummy things, from chestnuts to curry noodles to fried rice, cookies, and chewy candies called Hi-Chews. For the potluck, a friend and I made this stuffed peppers dish.

stuffed peppersThis recipe is adapted from Heat Oven to 350‘s Stuffed Bell Peppers recipe. I like how this recipe has only a few ingredients, and the steps are also  simple. The magic ingredient is the salsa, which gives the filling a Southwestern taste. The only changes I would make to the original recipe is to use more bell peppers (I had a lot of filling left over) and to substitute the chili powder with black pepper. If you don’t like turkey meat, feel free to substitute the ground turkey in this recipe with any type of ground meat.

Turkey Stuffed Peppers

Ingredients
  

  • 4 large red bell peppers
  • 1 chopped medium onion
  • 16 oz lean ground turkey
  • 4 garlic cloves minced
  • 1 tablespoon black pepper
  • 1 tablespoon ground cumin
  • 16 oz jar salsa
  • 1 cup rice
  • shredded low-fat cheddar cheese
  • cilantro

Instructions
 

  • Pre-heat oven to 350 deg F. Cut bell peppers in halves and remove seeds.
  • In a pan on medium heat, brown turkey. Add minced garlic, onion, black pepper, and cumin. Stir and cook for 2-3 minutes. Add rice and salsa. Mix well.
  • Put bell pepper halves on a cookie sheet with aluminum foil lining the bottoms and divide turkey mixture evenly among them. Top with cheddar cheese and bake for 8 minutes.
  • Garnish with cut cilantro and serve.

These were fantastic. I omitted the cheese and added a little extra salsa on top. Very, very good.

Step 2 in the instructions call for chili powder but there is no call for chili powder in the ingredients. Black pepper is specified in ingredients but there is no reference in instructions. Which is the proper ingredient?

Thanks for reading the instructions so carefully! The ingredient I used was black pepper, not chili powder. Sorry for the typo! I just fixed it in the instructions. Let me know if you have any other questions!
