- 2 slices sourdough toast
- 1 ripe avocado
- 2 eggs
- 1 teaspoon chipotle powder
- 1/2 teaspoon black pepper
- Oil for frying eggs about 1/2 tablespoon
Toast the bread in your toaster.
Meanwhile, peal and then mash the avocado with either 2 forks or a pie cutter. Add chipotle powder to the avocado, and stir till well combined.
Add 1/2 tablespoon oil to a pan, and crack the 2 eggs into the pan. Sprinkle black pepper on the eggs.
Cover and let heat on medium-high heat for about 3 minutes to have a slightly runny center. Heat for additional 1-2 minutes for a harder center.
Smear avocado onto the toasted bread, and top with fried egg. Enjoy!
