This is a simple cucumber salad you can make using the  small Persian cucumbers. One cucumber makes one salad, and the salad should be made the night before you plan to eat it for the sauce to get in the cucumber. I make it as a side dish, because  it is yummy and looks kind of cute like a  caterpillar.

Cucumber Spring

Prep Time 20 minutes
Total Time 20 minutes

Ingredients
  

  • 5-6 cucumbers
  • 1 tsp salt
  • 1 tsp sugar
  • 5 cloves of garlic smashed
  • 2 small red peppers cut
  • 1 tsp of dark soy sauce
  • 1 tbsp sesame oil
  • water to cover cucmbers till top layer is half covered

Instructions
 

  • Wash 5-6 Persian cucumbers (small cucumbers)
  • place two chopsticks- one on each side of a cucumber, then slice the cucumber into 2 mm slices diagonally.
  • Flip the cucumber over, with the unsliced surface facing toward you (positioning is important, if you don't put the unsliced area on top, you will not see the spiral shape as well at the end).
  • Slice the unsliced surface diagonally again using the chopsticks as a guide
  • Now you should have a spiral!
  • Place all sliced cucumber spiral into a bowl and add the remaining ingredients - add enough water so that the top layer of cucumber is half covered.
  • Place in fridge to marinate cucumber overnight or 8 - 12 hours. You can flip once in the middle if you feel like. Fish the cucumbers out of the sauce to serve and garnish with some cut red pepper.
